Modern Rice Milling Processes
Milled Rice is being produced, in Rice mills, after removing bran, husk and germ. Rice produced after modern rice milling process has different flavor, appearance ( whiten) and extended life.

What is rice milling?
Rice milling process is all about producing edible milled rice after separating the husk (20%), the bran layers (11% ) & clean rice (69%) aka starchy endosperm.
modern rice milling process flow chart and steps
In an ideal milling process this will result in 20% husk, 8−12% bran depending on the milling degree and 68−72% milled rice or white rice depending on the variety.
Modern Rice Milling Process
Pre-cleaning Paddy rice comes from farms with impurities like weeds, soil, and seeds, which need to be removed to avoid affecting hulling and milling efficiency. The pre-cleaner has a capacity 1.5 times that of the milling process, ensuring efficiency in modern rice milling.
Dehusking or Dehulling Brown rice is created by removing the husk from rough paddy rice using friction, allowing the husk to be separated and sent to a storage area outside the mill.
Paddy Separation Paddy separators help separate unhusked paddy rice from brown rice. Typically, less than 10% of paddy remains after husking, which is then separated and removed.
Whitening or Polishing White rice is made by removing the bran layer and germ. This is done through abrasive or friction polishers, removing about 8-10% of the total paddy weight.
White Rice Separation Once polished, white rice is sorted into categories like head rice, large broken, and small broken grains. Head rice consists of whole kernels at least 75-80% of their original size, and a grader is used for precise separation.
Rice Mixing In modern mills, the final product typically consists of 50-60% head rice, 5-10% large broken grains, and 10-15% small broken grains. The percentage of broken grains varies by country and market standards. A volumetric mixer is often used for proper rice mixing.
Mist Polishing This step involves adding a fine mist of water to the whitened rice to improve its luster. A friction whitening machine sprays the mist, offering a final polish before the rice is sold.
Weighing Finally, rice is weighed and packaged, often in 50 kg sacks. Advanced manual or mechanical weighing systems are used to ensure accurate weights, contributing to the overall efficiency of the milling operation.
